Pre-Workout Snack Quickie



Fruit and Nut Bowl 
Laces strapped, Ipod charged, playlist ready, gym bag packed....it's time to burn some calories. But don't forget your workout fuel leave the sugar filled gels, candies, and energy bars behind and create your own with a few staple ingredients. Using fresh and dried fruits you can create a GIANT size bowl of Energy. I call it my "Energy Snack Quickie" the berries provide the antioxidants with a hint of tangy sweetness. The flax seeds and walnuts offer an abundance of Omega 3 fatty acids, in addition to antioxidants and a host of vitamins and minerals ranging from B-6 to Folate.

This bowl of wellness tends to be a great option for folks on the go, why? because there is simply no measuring required, just throw in whatever berries you have in a bowl top with flax or chia seeds, add some nuts, and dried fruit and WA-LAH!!! Energy to-go. The beauty of this snack is that it offers a natural sweetness that will fuel your workout from beginning to end without the energy crash artificial sweeteners promise.  Hope you enjoy.

It's Persimmon Season + recipe

As a little girl my Nana, an unlabeled vegetarian/ health nut/food activist. Introduced me to a world of organic, sustainable fruits and vegetables through her garden. She put her soul into her garden. On her knees, in the dirt, for hours she'd hum and sing as she planted collard greens, peppers, strawberries, tomatoes, cucumbers, and squash. Not to mention our backyard had a peach, orange, and grape tree that we'd make pies, jellies, salads, and casseroles from. 

Nearby my Aunt Faye had trees full of pecans, figs, and persimmons, (what I thought were orange tomatoes). I lived like a country girl in the city which indirectly taught me the importance of organic farming, sustainability, and food justice.  Although, I had been exposed to a world full of delicious fruits and veggies the orange tomatoes stole my heart with their mild sweetness, hint of spice, and chewy texture.


There are two types of persimmons Fuyu and Hachiya. Fuyu persimmons are shaped like tomatoes, with a tough outer skin, with a mild sweetness, and can be eaten anytime. While Hachiya persimmons are acorn shaped, with a soft outer skin, and can only be eaten when very ripe (or you will get cotton mouth).


One of the great things about persimmons are their versatility. They can be eaten raw, baked with spices, canned and jellied, and even blended into a smoothie. One of my favorite persimmon treats is my Raw Vegan Persimmon Pudding.

I’ve included the recipe below:

2 Large, ripe persimmons
2 Frozen ripe bananas
4 Medjool dates
1 tsp. Vanilla
4 tbsp. Chia Seeds
4oz Coconut milk 

Directions:
Combine all ingredients in a blender on low speed until liquefied. Remove from blender and pour in a container with a lid. Cover and put into freezer for 20 minutes. Remove from freezer, serve with a mint and Chia seeds for garnish.

The Wholesome Simplicity of Shangri-la Vegan

I strive for simplicity in my life with the exception of my 500 book collection, 2 dozen pairs of jeans, and a collection of magazines I just can’t seem to part with. Remember, I merely said I STRIVE for simplicity I am not quite there yet. However, there is one place that provides me with all the simplicity I need in a meal.

This is my favorite place to lift my fork and sip tea. There is nothing extraordinary about the decor just chairs, tables, and a set menu written on a chalk board it is very humble, simple, and divine.

The servers/cooks are very warm, genuine, and friendly.  It is ran and owned by a Tibetan man whose vision directly inspires the wholesome simplicity of each daily menu. If I could, I would eat here everyday and actually there was once a time when I did. Now, I aim for at least once a month and twice if I’m lucky. 

Shangri-la is unlike any other restaurant, they are so confident in their food they provide a set menu daily. One for lunch and one for dinner. These meals have three different variations: Simple plate without seasoning or oils, Moderate plate which can feed an average person with a good appetite and Full which can be shared between two people or someone who hasn’t eaten in months. The prices vary for each variation. Initially, I thought it was too pricey yet, as I learned more about health and wellness I realize this place is perfect as it is. 


In addition, for all us of vegetarians and vegans out there another great aspect of this place is that the moderate plate supplies us with complex protein, complex carbs, and 3 servings of vegetables. It’s a complete balanced meal and they do it so effortlessly.

Finally, to wash it down their mild tasting tea is pleasant and self serve. Oh! and their vegan desserts are delicious (trust me I've tried them all). So, do give them a try folks and come back to share your thoughts. Happy Eating!!!

Vegan in Atlanta Part 2: R. Thomas Grill

 It is my goal to visit every vegan friendly restaurant in my vicinity be it my home town, my new home, or any place I maybe visiting that feels like home. I love healthy food, I love trying new things, and I love sharing the experience with others. So here goes. I knew I'd be traveling to the Atlanta and would need to eat so I researched all of the vegan restaurants in ATL and the one closest to my hotel was R. Thomas Grill.

R. Thomas Grill is unlike any place I've ever been its has the laid back flare of the South with a California inspired menu. The outside looks like a pumpkin patch with pumpkins, scarecrows, caged birds, grassy hay, and the occasional skull here and there. (Think of Halloween year around) Inside, is like a busy cafeteria, picnic style tables and even more of the pumpkins and skulls decor.

 The place was amazingly busy not to mention there was a line out the door to get in. The harried wait staff bypassed greetings and asked that I shout out my order. Although, I had reviewed their menu online at least 20x before (which is kinda my thing just to be sure meals fit into my daily nutrition and caloric needs) being there live and in the flesh required I place a little extra attention on the desserts. Yum!

The great thing about R.Thomas Grill is that it caters to every type of eater from carnivore, pescatarain to down right raw vegan. I mean truly you could order a burger, fish, vegan bowl, to a raw pie all in one menu. As I hear it this place also happens to be popular to Atlanta's rich and famous such at Ludacris, Usher, and Andre 3000 to name a few.

I digress.

 After shouting out my order I waited patiently taking in the ATL restaurant vibe- I can't say it was much different from the Bay yet I can say I am glad the Bay is culturally diverse. First arrives my Donkey Kong Smoothie (which I sipped up so quick I forgot to take a picture of it). While sipping I watch the owner circulate the room with baby birds in which people were eager to hold and touch. He seemed very kind and warm-hearted. Shortly after my food arrived and it was good; my server Michael who happened to be a former athlete was very friendly and introduced me to the Souths well known Southern hospitality. I thoroughly enjoyed my smoothie, my entree was okay, and my dessert  was delicious. Overall, it was  a great experience and I am so glad I went.

Vegan in Atlanta Part 1: Truva Mediterranean Restaurant


As you know, I visited Atlanta, GA almost 2 weeks ago for a conference and race. Also, as you know I am vegan and Atlanta is known for its tasty Southern soul food which is often devoid of fresh vegetables and vegan options. Although, I always pack emergency food for my travels I wanted to explore the vegan options Atlanta offered. I stayed in downtown at the conferences host hotel I didn’t want too stray far from the location so my options were limited to the surrounding area.

I roamed the streets like a tourist taking pictures of everything in my Bay Area weather confused dress which was: long sleeved and above the knee. 



After passing over 8 restaurants that could barely meet the needs of a vegetarian. I came across a beautiful restaurant and named Truva. The menu had many vegetarian options and a few vegan options. I studies the menu for a good ten minutes outside before I decided to go in. I didn't want to walk in and walk right back out if I learned they had nothing I could eat.

Finally, I decided and ordered stuffed grape leaves and red lentil soup it also came with bread that I was assured hadn’t been prepared with dairy or eggs. I was in business.

My waitress was very kind and efficient. I would definitely visit again and the food was delicious and filling. (I tried to go back the next day for lunch but they’re only open for dinner).

Corazon Juice Bar's: Liquid Love




The "heart" of San Francisco California, is in the Mission district where fresh squeezed juice and smoothies from Corazon juice bar call your name. This urban abode is just the place for a pick me up, liquid meal, juice cleanse, or end of the day rejuvenater  It is ran by a native San Franciscan family with a great a story to tell. The menu is creative and reasonably priced. The juice bar is trendy, well lit, and minimal.

Although, it appears small there is enough sitting for a party of 10  (trust me I counted because as soon as I left all I could think of was inviting all of my juicing friends over for a party). Their most popular drink currently is the Super Fresh which is a mix of: cucumber, mint, spinach, pineapple, and apple. This tasty juice is packed with antioxidants, iron, essential minerals, and a fresh kick. I also like the Rhyming Orange. (I haven't tried them all yet)

For many reasons Corazon's existence excites and inspires me.

 1. A juice bar in the Mission District. The Mission is known for many things and most of them are not positive. The mere presence of fresh juice uplifts the community. The enzymes from the juice allow the body to accept nutrients leaving us feeling satisfied and happier. Also, the aroma of fresh juice is so pleasant, young children may begin to ask why "Tampico" doesn't smell that way?

2. Owned by native San Franciscan's: I love seeing natives investing in their own community as opposed to relocating and taking their business dollars away from the cities and towns that nurtured, taught, and raised them. Corazon is contributing to their native city economically by keeping the dollars in the city. While also improving the communities health by offering fresh juices that are known to improve digestion, healing, wellness, and overall well being.

3. Owned by people of color: The people who are plagued most with diet/lifestyle related illnesses such as diabetes, heat disease, obesity and cancer are people of color. Yet, the majority of vegetarian and vegan restaurants/venues/advocates are not these people. I am elated to support any business of color that is promoting health and wellness to others especially if located in a community where people of color reside. Food justice is an epidemic in America. Without access to good quality foods or at least the option to it in my eyes it is a crime.

4. Benefits of juicing: A juice bar helps share the benefits of juicing with others. It plants a seed figuratively and literally into the body about growing into optimum health and wellness. It is a better alternative in both taste and benefit to other popular beverages such as soda, coffee, and energy drinks

Above is my "end of the day pick-me-up" after long day with students. As I walk to the juice bar I always see at least five others pouncing the Mission pavement with Corazon cups. What I love most is that these people come from every walk of life I see mothers, business men, students, and teachers like myself drinking the liquid love that comes from Corazon juice bar.

At Home Chef: Vegan Taco Recipe


Homemade Vegan Tacos


Ingredients:

Romaine Lettuce or red cabbage or dino kale
1/2 Red Pepper
1 Tomato
1/2 Onion
Guacamole
Corn tortillas
Daiya Mozzarella Cheese
Seasonings to taste (Chilli powder, Himalayan salt, black pepper)
Your favorite brand of fuax meat

Prep:
Chopp all vegetables: tomato, onion, red pepper, lettuce.

Cook:
In a pan pour in 1/2 of chopped yellow onion with 1/4c. water. This will create its own oil which will rule out having to use any oils that could become carcinogenic if used at high temperatures. Next pour in your faux meat, stir as you season it. Cook for 4-6 minutes.

In a skillet with water and onion or oil lightly fry the tortilla to your liking. Let sit on a paper towel to catch excess oil.

Presentation:
On a plate, in this order add tortilla face up, meat, cheese, lettuce, veggies, guacamole and salsa if you like. Wah La!!!! Vegan Tacos. Enjoy!!!

Encuentro Cafe and Wine Bar: Raw Vegan Dinner



Whoever said vegans have no fun- didn't have me in mind.

 I have fun daily preparing my meals in my kitchen and eating out at least 2x a week with friends. Last week I ate at a fairly new Downtown Oakland Vegetarian/Vegan and raw vegan friendly Cafe and Wine Bar named Encuentro. There were many fresh options on the menu ALL vegetarian with a vegan option. Although, I didn't leave fully satisfied my salad was very tasty and pleasing to the eye.
